My Greek cravings have been at an all-time high recently.
So, I decided I wanted to try my hand at something. And, can I repeat something for those in the back, I CAN cook, I just don’t LIKE too! Pls, lets set this record straight for the millionth time. Just because someone chooses not to cook often, doesn’t mean they can.
I mean, I do prefer to cook with a recipe. I make healthy, basic stuff without a recipe, but for new stuff, I like some guidance.
Of course, I ran to Pinterest to find a Greek-inspired recipe. I find looking for quick recipes is easier when I look for healthy recipes, they usually require fewer ingredients and are healthier. It seems to be a win-win for me. I found the Greek Chicken Bowl (Meal Prep Easy) pin with a quick search of ‘Greek.’ The pin takes you to a blog, lovely culinary where the actual post lives.

- 2 pounds boneless skínless chicken breasts
- 1/4 cup olive oil
- 3 Tbs garlic minced (Note, adjust to preference)
- 1/3 cup fresh lemon juice
- 1 Tbs red wine vinegar
- 1 Tbs dríed oregano
- 1/3 cup plain Greek yogurt
- Kosher salt and freshly ground black pepper to taste
- 1 cup plain Greek yogurt
- 1 Englísh cucumber finely diced
- 1 tsp – up to 1 Tbs minced garlíc adjust to garlíc preference
- 1/2 Tbs díll weed or 1 Tbs fresh díll, chopped fíne
- 1 1/2 tsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp chopped fresh mint optional
- Salt and pepper to taste
- 2 English cucumbers peeled and sliced
- 1/3 cup lemon juice
- 2 Tbs olíve oíl
- 1 Tbs red wine vinegar
- 1/2 Tbs minced garlíc
- 1/2 tsp dried oregano
Overall, I liked this recipe and it was super easy to follow. If you’re looking to Greek it up, I’d say this is a good one. The only thing was the chicken had too much lemon flavor for me. I like lemon, but it was overbearing in the chicken. That would be the only change I’d make. Also, you can see I just added the tomatoes and the red onions to the Cucumber Salad. Since I wasn’t meal prepping this, I did it a little different.
Also, I added my fave brown rice + quinoa mix instead of the white rice. I also realized I would have preferred to have pita’s, BUT I didn’t, so I had my fave pita chips from TJs. It was a delish dinner and it didn’t feel like I was being gluttonous like I do when I go out for Greek sometimes…
Not gonna lie, I was a little worried about how the Tzatzíkí sauce would taste, but I liked it. It works as a dip with pita chips but also tastes good on chicken too. I plan to make this again, however, I’ll ease back on the lemon juice in the chicken marinade. It was a little time consuming, so I’ll either have to prep it or not make it on a gym night. But I’m glad I spent some time in the kitchen, it was exactly what I needed that night.
While I don’t always find joy in cooking, there are times where I do. Or I at least feel accomplished, rather than joy. This was one of those. I was happy when it was all done. I enjoyed my meal in my new home, I don’t need much more than that at the moment.
It’s no Santorini, but it made me happy!
