Diary of a Non-Cook: Cheesy Tater Tot Breakfast Bake

Brinner for Girls Night! Tots! I think we joked that breakfast for dinner is a way to metaphorically start the new year. Or something ridiculous like that! Brinner is always a fave with the girls and it’s super easy to make and plan. Luckily, my over organizational skills have left my Pinterest in an array of boards according to my life. Quickly, I went to my Girls Night Ideas board to see what ideas I saved/pinned. Of course there were some Brinner ideas. The Cheesy Tater Tot Breakfast Bake was my second choice, running up to my other pin — Egg Boats which wasn’t working correctly. This recipe brought me…

    Diary of A Non-Cook: Biscuits & Gravy

Pioneer Woman, I see you. Image via Food Network Well, really, Pinterest saw you first, then I followed soon there after. Have you heard of her? Is she like Paula Deen? Does she thrive off butter? Why is her name so old school? These are some of the random thoughts I had when I originally heard about her. I’ve perused through her cookbook and recipes, but I never thought to commit to one. Let’s start from the beginning. A month or two ago I was at Costco and tried a sample, it was delicious. It was a biscuit. I didn’t think anything of it, until I was looking for eggs…

    …and Like That It’s Over!

Christmas has come and gone… …just like that. If you remember correctly, I was trying to find my Christmas spirit on Christmas Eve. Shortly after I wrote/posted that, it started to sink in and magically I began to start feeling more in the spirit. Maybe it was just saying it out loud (well, really writing it) that made snap out of it. Maybe the super relaxing pedicure that was pure bliss also helped. But by Christmas Eve I was in the full Christmas spirit and ready for all the celebrations ahead. Christmas Eve w/ J’s family. This long weekend was exactly what I needed. Family time. Family time. Friend time. Lets just say 3.5 days was not…

    WIAW – Monday (Ugly) Eats

Being a rule follower today! Thanks, Jenn! So here is What I Ate Monday. As much as I want to, I won’t apologize for how ugly (re: foil plate) my plating and eats are. This is a genuine day in the life of my food intake. Breakfast and lunch are almost always consumed at my desk. Dinner is always up for grabs, more than half the time I don’t even know whats going to happen until it is being made or purchased somewhere! Breakfast Breakfast Sandwich: Whole Wheat bread, one slice of TJ’s Colby jack cheese, three egg whites, and a little (actually a lot) of TJ’s Organic ketchup! Coffee:…

I feel like I’m letting you down with how non-appealing my eats are these days… Thanks, Jenn! With that said, sorry folks! Here goes some ugliness…but I’ll try to make up for it at the end, promise! Tuesday Eats Pre-Breakfast So my friend from Midtown S/C knows and supports my obsession for all things bacon and even donuts. So he posted a picture of one on Monday and I joked said that he should bring them in to class on Tues AM. Well hot damn! He DID! Bakers Donuts – Maple Bacon Donut Will workout for bacon OR donuts! Breakfast Attempting to keep it healhty-ish Toast – 1 slice of…

    Rose & Thorn [9]

I’d been looking forward to this weekend for awhile. Any time spent in a bikini, near the ocean with sand in my toes, has to be a fairly perfect weekend! Rose: Our family beach day trip to Capitola. Thorn: 2 things are rivaling each other, relationship stuff (don’t want to go into too much detail, sorry for being Miss Vague) and an epic sunburn! What was your Rose & Thorn? Because I am feeling completely uninspired today and I don’t want to bog you down with some verbal nonsense, I will post pictures from my beach weekend and keep the literary genius to a minimum 😉 FRIDAY Got my girl…

    5 Things Friday – Just Cause…

Happy 7-11 Day! Thanks, Clare! Go grab yourself a free mini Slurpee today at 7-11! I do it every year, so this year shouldn’t be any different! I’ve been looking forward to this weekend for a long time! Saturday is a family beach day trip to Capitola. If you aren’t familiar with Northern California, Capitola is a quaint little beach town about 10 minutes from Santa Cruz. So underrated in my book, we’ve been going here since Freshman year in High School. One of my best guy friends’ family owns a cabin here! So many memories and plenty more to make!. 5 Breakfasts’ This Week – This is the grossness…

WIAW – The Spectrum of Eats

From “I’ll never post that food pic on IG” to “I need that in my life right now” pic! Thanks, Jenn! You can take your fancy food pics and shove them up… I’m really not bitter or anything…I promise 😉 I’ve noticed that when I eat out and snap pics, my meals look a thousand times better. When I try to concentrate on eating healthier and make/pack my meals….they look….well, how shall I say this politely…ugly!  There’s absolutely nothing fancy about what I ate yesterday, with the exception of dinner for the Bestest’s birthday. Again, that was a meal consumed at a restaurant (or two), so of course it looks…

WIAW – The Big Easy Eats

The Big Easy…ain’t so easy on my waistline :/ Thanks, Jenn! Every year, work sends me on a trip to a trade show. It is our largest, domestic trade show…so basically it’s a B-I-G deal! All the prep-work happens two months before, then it’s SHOW time! This year the show landed in NOLA (that’s New Orleans, for those that aren’t hip to my lingo)! Added bonus about this location, is a really good friend from High School, who goes by Hollywood, lives here. So a little fun and a little work all mixed together for 7 days in the Big Easy! Please bear with this post. The pictures are a…
