Diary of a Non-Cook: Mexican Food + Pinterest

Oh, of course my creations are via Pinterest.Does that even surprise you these days? I was perusing Pinterest for some cooking inspiration and I thought to look at older pins, which of course I had never tried. Lo and behold, I found a good pin: 5-Ingredient Slow Cooker Steak Fajitas! I then got bold and decided we couldn’t have fajitas without Spanish Rice (it is ignorantly labeled Mexican Rice by the creator) so I found a recipe (re: pin) for that too. It was just going to be dinner for J and I, but the crockpot makes so much I decided to invite Care and her lil fellas over for…

    Musings: Smiply Crafting

Crafting done simply.   Pinterest, my disdain still lingers, even though I continue to use it regularly. However, I think that with the ever fanatic use of the app/tool, people forget to come back to reality and remember most of us have full-time jobs, kids, commitments…A LIFE! Pinterest crafting takes way too much time and money to really do it correctly…thus, simply crafting done MY own way!!Pinterest seems to put an emphasis on taking the simplicity of creativity out of the picture. Everything needs to be curated to the nth degree. For those that don’t give any F’s, kudos to you. It’s hard not too, human nature doesn’t make it…

    Musings: Boycott Easter Candy

Okay, I’m not Bummer Bunny or anything… …but I feel like every year all the kids in our families and L receive tons of candy for Easter. To change it up this year, I decided to gift something else. I’m sure I’m not the first person to do this, so I’m NOT claiming rights to my crafty idea, but I thought I’d share what I am giving to the Lovebugs this year. I decided that books were a great gift for the kidlets. Yes, they’d love candy way more than that. I want something better than five seconds of gratification — AND I know that others will gift candy, so…

    Musings: Celebrate Life…with Some Glitter

When your girlfriend is officially cancer free, you celebrate. You celebrate with class, which obviously means glitter! Duh! There are some rules about what determines a person to be Cancer Free, so please be cognizant of what it actually means. Kelly, our superhero, has undergone rounds of chemo, radiation, and way too many hospital visits/stays to recount. But as of the beginning of the month, she told us she no longer needed Chemo and that she did not have any cancer in her body! We all were so emotional and full of happiness for her. To say one is cancer free, I believe you have to hit the five year…

    Diary of a Non-Cook: Lasagna Roll-Ups

When a Pin just sticks with you… Rolling up lasagna noodles just seems fun, which is why I probably always remember seeing this pin or one similar to it. Or there are just that many inundating Pinterest. I’d been craving the taste of lasagna and I knew J’s little bro would be over for dinner soon, so I thought I’d give Lasagna Roll-Ups a whirl. via Cooking Classy This pin lead me to Cooking Classy, which is a food blog written by Jaclyn. Please take a peek at her website, she has plenty of things to peruse. As I do for all of my ‘Diary of a Non-Cook’ posts, I…

Sprinkle Baby C // Animal, Woodsy, Fox Theme

A Gender Reveal, a Sprinkle, a Babymoon, a Push Present… …all this new age bull-shit! I mean really, these new terms deemed necessary for new (or not-new) Mom’s is getting crazy. Consumerism has created a culture of craziness. That being said, I’m totally immersed in it, even though I’ve never birthed a child. Most of my friends have and are already starting on their second (or third, or fourth) child. Everything evolves, I get it. Best thing to date is my Mom still asking my Dad for back dated push presents for my sister and I! HAHA, every birthday she mentions it to him! I’m not mad at anyone, I…

Diary of a Non-Cook: Cheesy Tater Tot Breakfast Bake

Brinner for Girls Night! Tots! I think we joked that breakfast for dinner is a way to metaphorically start the new year. Or something ridiculous like that! Brinner is always a fave with the girls and it’s super easy to make and plan. Luckily, my over organizational skills have left my Pinterest in an array of boards according to my life. Quickly, I went to my Girls Night Ideas board to see what ideas I saved/pinned. Of course there were some Brinner ideas. The Cheesy Tater Tot Breakfast Bake was my second choice, running up to my other pin — Egg Boats which wasn’t working correctly. This recipe brought me…

Diary of a Non-Cook: Classic Beef Stew

I’m (c)rockin’ that pot, y’all! I’ve been wanting to take advantage of my good ‘ol trusty crock pot for awhile. Stew is the perfect thing to make in the CP. I finally committed to it. It helped that J’s Mom bought us a pre-made package of veggies that are perfect for stew – $5 for potatoes, onions, carrots, and celery – easily ready to dump into a crock pot. My Dad makes the best stew, but I know he wings it and add whatever he wants. Since I’m not that adventurous I ran to Pinterest to find something to add to my Crock that Pot page. I came across Flavorite‘s…

Diary of a Non-Cook: Ground Turkey Stuffed Peppers

Ground turkey rules everything around me! Even though J is sooo over it. The world is just a better place with ground turkey versus ground beef. HAHA, says the girl who loves ordering burgers. I will say, as long as I’m not handling it, then I don’t mind. I don’t even really like to handle raw meat in general (dirty minds, stop!), but I do since I’m like an adult these days 😉 When you do your monthly Costco run and home home with four packages of ground turkey, you immediately grab your phone and bring up Pinterest and type in — ground turkey + dinner = WA LA, you…

Diary of a Non-Cook: Parmesan Chicken Roll Ups

Oh Pinterest, you amaze me! Even though I still never give you enough credit and pretend to despise you. I will say, I don’t understand why people pin outfits for seasons or outfits, it’s really odd to me. Anyways, back to the subject at hand — me trying to cook still. We didn’t have anything planned for dinner, so I went to Pinterest for some PINsipration for dinner. I looked through my Maybe I’ll Make it One Day board for some something and I came across something I’d pinned previously. The criteria for the recipe for dinner had to be minimal ingredients, something an 8 year old would eat, something…
