Diary of a Non-Cook: Mexican Food + Pinterest

Oh, of course my creations are via Pinterest.Does that even surprise you these days? I was perusing Pinterest for some cooking inspiration and I thought to look at older pins, which of course I had never tried. Lo and behold, I found a good pin: 5-Ingredient Slow Cooker Steak Fajitas! I then got bold and decided we couldn’t have fajitas without Spanish Rice (it is ignorantly labeled Mexican Rice by the creator) so I found a recipe (re: pin) for that too. It was just going to be dinner for J and I, but the crockpot makes so much I decided to invite Care and her lil fellas over for…

    Musings: Iced Coffee Dilemma

My bank account cannot keep up with my Summer induced ice coffee addiction! Seriously, ever since starting my new job that has a Starbucks relatively close, my bank account has been diminishing exponentially. Finally, I had to put a stop to it! An iced coffee + breakfast item was averaging at about $9/day AND that’s just for breakfast! What the hell?! Since disposable income isn’t really in my vocabulary these days, I needed to get smart about this painfully debt inducing habit. I of course went to FB to crowd-source my options and I came back with a bunch. Previously, I looked into various Cold Brews at various stores. I noticed…

    Musings: High School Insecurities

I’ve never had perfect skin… And I completely thank my lucky stars that I’ve never had real acne. I’ve always had pimples and some minor sports acne, but nothing that made me insecure or really care. Well, here we are at 34 and I’m feeling insecure as ever. The skin on my face has been freaking out for about the last eight to ten weeks or so, give or take a couple weeks. I cannot figure out what it is. I haven’t changed anything that could irritate my skin — no new detergents, soaps, shower stuff, perfume, make-up, face wash, or ANYTHING! At the highest point of irritation, both of…

    Diary of a Non-Cook: Lasgne

Why is it spelled like that? I always thought it was lasagna, no? Well, my co-worker/cube mate was telling me that she made a lasagna for family that was visiting over the holidays. That, coupled with the Bestest bringing over a delicious homemade lasagna a couple weeks back, I was on a mission to try to make one. The Lil makes one frequently, which was also a little inspiration. Since my co-worker and I chat all day, Monday through Friday, we talk about a lot of stuff – family, kids, cars, work, life, anything really. We sit about 15 feet apart from one another. Since she just made her’s and…

    The Art of Saying YES!

I’m pretty sure I’ve mastered it. Much to J’s displeasure, I’ve always been the girl who would join you for anything – coffee, dinner, a run, you name it, I was probably down.  Although eventually a relationship was added into the mix, the ‘Yes’ still came natural. J may strongly disagree, but I’m slowly learning to say ‘No’ to invitations. It’s hard. I wasn’t used to it. I’m getting there. It took some time to realize and adjust which priorities took precedent in my life. Trying to find a balance is always a struggle and I’m sure will always continue to be. I love trying new things AND exploring new…

Diary of a Non-Cook: Tikka Masala

Domesticate yourself. Learn to cook. It’s shoved down my throat all the time. You spend all your money on going out. Blah. Blah. Blah. I cooked. It sucked. It doesn’t always, but this time it did. Yes, I could have picked a recipe with less ingredients. Yes, I could have thought it out a little more – although, I thought I did. I really enjoy Indian food when I go out to get some, which isn’t often enough. I love the flavors and that naan, oh that naan. It’s bad, I can eat about five servings of that delicious, warm, carb laden goodness. I digress, sorry. So, Pinterest floods me…

    Rose & Thorn [52]

A whole year of Roses & Thorns! Rose: Being active ALL weekend, with lots of soccer! Thorn: Relationship stuff with J… What the summer? Why was it so freakin’ hot this weekend? Oh well, I guess I can’t complain, I’m a summer lovin’ girl at heart! The WWC started this weekend, but it sure didn’t seem to have the excitement and hoopla that the men receive, but as is expected. Lots of watching and playing soccer this weekend, as it should be for two soccer players who are dating 🙂 Just for fun, here’s my first EVER Rose & Thorn post! Apparently I missed a few Mondays, because one year…

    WIAW – Oh My Eats!

Catchy title, for some basic lookin’ food… Thanks, Laura! The merry-go-round continues. This week we take a tour of Sprint 2 the Table ! Laura has so graciously offered to host this week, so please stop by and take a look around – I know I will be. But as always, peep Jenn’s blog to see where it all started! I’m not really deviating from Jenn’s original WIAWness, but I am sharing what I ate the last two days this week, minus one meal. So enjoy my rather mundane eats as I try to eat a little healthier and not overindulge in large portions. Monday Lunch // Not pictured is…

    WIAW – Green Everything

Veggie Week has me feeling pretty good… Thanks, Meghan! This week brings us to Clean Eats, Fast Feets ! We’re both new here so have fun exploring Meghan’s blog. From what I can see she has some pretty nice food shots, thanks for hosting Meghan! But please, always stop by Jenn’s blog to see where it all started! The intention of Veggie Week was never to feel like a detox week, but this week it seems like that’s exactly what it is. I notice I tend to eat a little less during these weeks, but that’s generally because I’m not creative when it comes to making things with just veggies.…

WIAW – Confessions of a Girl Who Doesn’t Cook

There’s a first time for everything… Thanks, Jenn! Probably, more like another attempt at something. Ever since I moved away to college, my cooking versus going out has been very one sided. I’ll let you take a guess as to which side I lean towards. When I get into my “crazy healthy” mode, as I’ll call it, I cook a lot and don’t eat out often. I suck when it comes to temptation. But life is different. I’m not in college anymore, I have a job and a home and little family that requires my time and efforts. I can’t solely focus on eating and working out, with school as…
