Diary of a Non-Cook: Zucchini Bread

Well, it really should be Diary of a Non-BAKER! You wouldn’t think veggies in bread would be ideal, right?!? Oh, but sooo wrong! Zucchini bread is my fave. Well, HUGE caveat, it must have zero, zip, zilch walnuts in it, on top of it, or anywhere near it! Those weird, brain looking, kinda soft nuts are not my thing. At. All. Okay, that’s a slight exaggeration, but I do not prefer them. Ever. Finding zucchini bread sans walnuts is akin to finding the holy grail. It doesn’t happen often, but when it does it is an amazing day. I can’t even lie, I’ve been known to be very non-lady like…

Diary of a Non-Cook: Mexican Food + Pinterest

Oh, of course my creations are via Pinterest.Does that even surprise you these days? I was perusing Pinterest for some cooking inspiration and I thought to look at older pins, which of course I had never tried. Lo and behold, I found a good pin: 5-Ingredient Slow Cooker Steak Fajitas! I then got bold and decided we couldn’t have fajitas without Spanish Rice (it is ignorantly labeled Mexican Rice by the creator) so I found a recipe (re: pin) for that too. It was just going to be dinner for J and I, but the crockpot makes so much I decided to invite Care and her lil fellas over for…

    Diary of a Non-Cook: Lasagna Roll-Ups

When a Pin just sticks with you… Rolling up lasagna noodles just seems fun, which is why I probably always remember seeing this pin or one similar to it. Or there are just that many inundating Pinterest. I’d been craving the taste of lasagna and I knew J’s little bro would be over for dinner soon, so I thought I’d give Lasagna Roll-Ups a whirl. via Cooking Classy This pin lead me to Cooking Classy, which is a food blog written by Jaclyn. Please take a peek at her website, she has plenty of things to peruse. As I do for all of my ‘Diary of a Non-Cook’ posts, I…

Diary of a Non-Cook: Cheesy Tater Tot Breakfast Bake

Brinner for Girls Night! Tots! I think we joked that breakfast for dinner is a way to metaphorically start the new year. Or something ridiculous like that! Brinner is always a fave with the girls and it’s super easy to make and plan. Luckily, my over organizational skills have left my Pinterest in an array of boards according to my life. Quickly, I went to my Girls Night Ideas board to see what ideas I saved/pinned. Of course there were some Brinner ideas. The Cheesy Tater Tot Breakfast Bake was my second choice, running up to my other pin — Egg Boats which wasn’t working correctly. This recipe brought me…

Diary of a Non-Cook: Ground Turkey Stuffed Peppers

Ground turkey rules everything around me! Even though J is sooo over it. The world is just a better place with ground turkey versus ground beef. HAHA, says the girl who loves ordering burgers. I will say, as long as I’m not handling it, then I don’t mind. I don’t even really like to handle raw meat in general (dirty minds, stop!), but I do since I’m like an adult these days 😉 When you do your monthly Costco run and home home with four packages of ground turkey, you immediately grab your phone and bring up Pinterest and type in — ground turkey + dinner = WA LA, you…

Diary of a Non-Cook: Fiesta Ranch Dip

What’s the trade-off for a quick dip recipe? It may come out looking like throw up! No biggie, right?! Good thing it tasted okay. I honestly don’t think there’s anyway to make it presentable or to make it NOT look like throw-up in a bowl, no matter how nice your dish is… The end of last week was really focused on L’s bday party on Saturday, pretty much everything else was an afterthought, until that the party was done. Then we decided to head to Tahoe for more birthday adventures for L, Lil, and Mom…even though that plan was somewhat foiled on Sunday. That all being said, we needed a…

    Diary of A Non-Cook: Biscuits & Gravy

Pioneer Woman, I see you. Image via Food Network Well, really, Pinterest saw you first, then I followed soon there after. Have you heard of her? Is she like Paula Deen? Does she thrive off butter? Why is her name so old school? These are some of the random thoughts I had when I originally heard about her. I’ve perused through her cookbook and recipes, but I never thought to commit to one. Let’s start from the beginning. A month or two ago I was at Costco and tried a sample, it was delicious. It was a biscuit. I didn’t think anything of it, until I was looking for eggs…

Diary of a Non-Cook: Easy Chicken Sour Cream Enchiladas

Sour Cream, don’t judge me! The checker at Safeway sure did. It didn’t help that he was Mexican and a self-prescribed cook of his household. He saw the ingredients and said, “oooh, enchiladas!” To which I replied yes, but made the fatal mistake of telling him I was making “Easy Chicken Sour Cream Enchiladas,” to which he gave me a pretty gnarly look and laughed. He then questioned baking sour cream and told me, “good luck with that!” What a nice fella! What he doesn’t know is that I’m just a girl trying to get better in the kitchen. I still follow recipes to a ‘T’ and I’m okay with…

    Diary of a Non-Cook: Lasgne

Why is it spelled like that? I always thought it was lasagna, no? Well, my co-worker/cube mate was telling me that she made a lasagna for family that was visiting over the holidays. That, coupled with the Bestest bringing over a delicious homemade lasagna a couple weeks back, I was on a mission to try to make one. The Lil makes one frequently, which was also a little inspiration. Since my co-worker and I chat all day, Monday through Friday, we talk about a lot of stuff – family, kids, cars, work, life, anything really. We sit about 15 feet apart from one another. Since she just made her’s and…

Diary of a Non-Cook: Tikka Masala

Domesticate yourself. Learn to cook. It’s shoved down my throat all the time. You spend all your money on going out. Blah. Blah. Blah. I cooked. It sucked. It doesn’t always, but this time it did. Yes, I could have picked a recipe with less ingredients. Yes, I could have thought it out a little more – although, I thought I did. I really enjoy Indian food when I go out to get some, which isn’t often enough. I love the flavors and that naan, oh that naan. It’s bad, I can eat about five servings of that delicious, warm, carb laden goodness. I digress, sorry. So, Pinterest floods me…
