Diary of a Non-Cook: Greek Chicken Bowl (Meal Prep Easy)

My Greek cravings have been at an all-time high recently. So, I decided I wanted to try my hand at something. And, can I repeat something for those in the back, I CAN cook, I just don’t LIKE too! Pls, lets set this record straight for the millionth time. Just because someone chooses not to cook often, doesn’t mean they can. I mean, I do prefer to cook with a recipe. I make healthy, basic stuff without a recipe, but for new stuff, I like some guidance. Rant over. Of course, I ran to Pinterest to find a Greek-inspired recipe. I find looking for quick recipes is easier when I…

Diary of a Non-Cook: Paleo Veggie Chili, NO Beans

Le Cruset is to the kitchen, as Lululemon is to the gym. This winter weather has me craving all the warm things, coupled with trying to make healther food choices + cooking more often. I’m honestly trying to find the joy in cooking. So when I feel the desire too, I’m going with it. No hesitations, just taking it in stride. I really wanted a chili recipe that I enjoy. It is hard to find it the way I like — sans beans. So, of course, I ran straight to Pinterest to find a recipe. Sunday’s dinner came to you via the following Pinterest search: chili, no bean, ground turkey.…

    Diary of a Non-Cook(ie) Party

Another December, another yearly tradition. I introduced you to our Cookie Party tradition in 2016, but Lil and I have been attending it for over two decades. It’s been going on for three to four decades, from what I’m told. So, it shouldn’t be a surprise that it happened again this year.  I wanted to make something, but the party landed on a very busy weekend. The night before, the Guidette and I hosted our holiday party. I knew we’d be up late and tired from all the shenannegins of throwing a party. To be fair, I didn’t do much, she did most of it. I was just there co-hosting,…

Diary of a Non-Cook: Mexican Food + Pinterest

Oh, of course my creations are via Pinterest.Does that even surprise you these days? I was perusing Pinterest for some cooking inspiration and I thought to look at older pins, which of course I had never tried. Lo and behold, I found a good pin: 5-Ingredient Slow Cooker Steak Fajitas! I then got bold and decided we couldn’t have fajitas without Spanish Rice (it is ignorantly labeled Mexican Rice by the creator) so I found a recipe (re: pin) for that too. It was just going to be dinner for J and I, but the crockpot makes so much I decided to invite Care and her lil fellas over for…

    Musings: Smiply Crafting

Crafting done simply.   Pinterest, my disdain still lingers, even though I continue to use it regularly. However, I think that with the ever fanatic use of the app/tool, people forget to come back to reality and remember most of us have full-time jobs, kids, commitments…A LIFE! Pinterest crafting takes way too much time and money to really do it correctly…thus, simply crafting done MY own way!!Pinterest seems to put an emphasis on taking the simplicity of creativity out of the picture. Everything needs to be curated to the nth degree. For those that don’t give any F’s, kudos to you. It’s hard not too, human nature doesn’t make it…

Diary of a Non-Cook: A FB Video Meal

We all know those time-lapse videos that speed through how to cook a meal, right?! Well, I finally saved one on FB and went for it last week. I showed L and ever since then we’d been talking about making it. This one is from Cooking Panda, dubbed the Taco Bake. It’s essentially a nacho casserole.  Directions & Ingredients from the video (I ad-libbed a bit) 9×13 Casserole Dish, Greased // Used this size and a small one for my own (sans beans) version 1.5lb Ground Beef, Cooked // Used 1lb Ground Turkey 1 Can Tomatoes + Green Chilies // Used a can of Rotel 1 Cup Sour Cream //…

    Diary of a Non-Cook: Lasagna Roll-Ups

When a Pin just sticks with you… Rolling up lasagna noodles just seems fun, which is why I probably always remember seeing this pin or one similar to it. Or there are just that many inundating Pinterest. I’d been craving the taste of lasagna and I knew J’s little bro would be over for dinner soon, so I thought I’d give Lasagna Roll-Ups a whirl. via Cooking Classy This pin lead me to Cooking Classy, which is a food blog written by Jaclyn. Please take a peek at her website, she has plenty of things to peruse. As I do for all of my ‘Diary of a Non-Cook’ posts, I…

Diary of a Non-Cook: 7 Layer Dip (for MOM)

Curating is the name of the game. Trader Joes is my arsenal! Each family party we volunteer to bring something. I generally get an appetizer, re: easy. I’m okay with that and everyone also gets a nice surprise when I arrive. This year, I was specifically asked to bring chips and dip. I hate beans, but I know most people don’t. Thus, making 7 Layer Dip a fan favorite. In all honesty, I knew I wouldn’t have to do too much heavy lifting (re: cooking) with this option too! Putting it off until the last minute, I headed to TJs at 9:30AM on Mothers Day. It was a mad house,…

    Ganeeban DOES NOT Run Shamrock'n

I’m sure my pessimistic running attitude has been shining through lately. Well, as I sit here on this gloomy Sunday afternoon. I’m a little sad, but mostly relieved that the race has come and gone without me. I’m bordering the line of a bad allergy bout, slight sinus infection, OR simply getting sick. I haven’t been able to figure it out exactly. I could have run the race. Let’s just make that clear. I could have done it, but I chose to not too to stay as healthy as possible for our upcoming trip. It wouldn’t have been fast, but I would have crossed the finish line. Also, this weather…

    Musings: Solidarity

Momma Bear has been on a mission. And of course, her highly skeptical daughter (re: me) had something to say about it. When she initially told us she committed to the local Results 20 lb challenge, I scoffed. Then she said she was forced to do two challenges, I was pissed. In retrospect I still don’t care for the way Results runs their business. I’ve also heard some unsavory things about the owners, but there are always two sides to every story. However, they are the push that Momma needed. They are helping her, motivating her, and guiding her to a healthier lifestyle — even if I think they are…
